There isn't much point in drying seaweed as all it does is double the spoil time compared to cooked seaweed so the reason would be if you are going on a long trip with a large amount of long spoil time food.

Dried Seaweed is the product of drying Seaweed on a Drying Rack for 1 game day.

There isn't much point in drying Seaweed as all it does is double the spoil time compared to Cooked Seaweed. The main exception would be if you are going on a long trip with a large amount of long spoil time food, but there are better foods for this task, making Dried Seaweed have limited uses unless you have a large abundance of Drying Racks and Seaweed.
